I Made Fried Chicken!

That's right everyone, I made fried Chicken, The Help style!  For some reason ever since seeing The Help I've wanted to try and make fried chicken, and although Minnie made it look easy, there are many detailed components involved. 

  
First I cut up a whole young chicken, after I let it thaw in my fridge overnight. Now there is a specific way to cut up chicken, which I looked up online. Robert kept asking me why I didn't just practice on our precut, frozen chicken tenders, but I wanted to do it right. I even wanted to kill my own chicken and de-pluck it and everything, but I don't have any chickens and I'm not one for slaughtering animals, so I settled with a frozen one from Costco.


After cutting up the chicken I seasoned it with a T of paprika, salt, pepper, cayenne pepper, and 2T of chicken seasoning and garlic powder.  I used half of the mixture to season the chicken, and the other half I mixed in with 2-3 cups of flour.


Then I mixed about a 1 cup of milk and 1-2 eggs together, you want more egg than milk, so mix accordingly.  Then you just dip the chicken in the egg mix then roll it in the flour with seasoning.  Then you want to dunk it and roll it again.  


once I had them all nice and floured I separated my chicken into two parts my white meat together and my dark meat together, because they will cook at different rates. Also you don't want to crowd the chicken, make sure there's plenty of space for each piece.


Before I even start rolling my chicken, however, I first fill up my skillet with 11/2-2 inches deep of vegetable oil and 1-2 cups of crisco and set it to medium high, generally right in the middle at about a 4 or a 5.  Then I gently placed all my white meat in first and you want it to sizzle, but not bubble and scorch your fingers. Now the key is to only turn your chicken once, and since white meat needs to cook for 16-20 minutes and dark meat 20-30, I just left it on one side for half the time, then flipped it for the second half.


Once pieces were finished I placed them on a paper towel to soak up the grease, then on a cookie sheet and in the oven to stay warm while I cooked the rest of the chicken


I'm actually surprised that the chicken turned out so well, it was definitely a crowd pleaser, and I can't help but be proud!  The entire time though I had Minnie in my head saying "I don't buuurn chicken....", and I didn't!

The Twins are Here!

Milo Enoch and Maverick Stanford Thompson were born on June 29, 2012 at 3:52am at American Fork Hospital.  We went in for our scheduled ultrasound and non-stress test at 37 weeks when the doctor told us that the boys were measuring slightly off, and I looked miserable so I should get induced and have the babies. (Excuse me!? What a terrible reason to force the babies out!)  However I ended up going into labor that night naturally anyway, and gave birth to two beautifully healthy baby boys, who were able to come home with us a couple days later with no NICU time, yay!!


The doctor on call was a jerk and the nurses were super mean, and they pretty much threw my birthing preference sheet for a calm natural birth out the window.  They literally refused to follow anything on my list and the doctor point blank said that he would not deliver me unless I had an epidural, or my other option was a c-section! What?!? I'm getting worked up again writing this! Anyway, we went in at midnight I was dilated to a 4, and I progressed super quickly, they barely had time to get an epidural in before wheeling me back to the operating room to deliver. Point is they arrived safe and healthy, so gad that all our prayers were answered.



So since the boys' arrival we have been EXTREMELY busy, as you can tell I haven't even posted their birth until now, 3 months later... not that that's saying much considering my blogging history.
Anyway, I love how cute they look on their bellies sporting some cloth diapers on the left, and on the right they look so tiny in their car seats ready to go home from the hospital. (Milo is on the left and Maverick is on the right in both pictures.)

After nursing, the boys generally fall asleep in my lap, and this is my precious view, I just love these little guys!

Many times while nursing, the boys would hold hands.  I can't think of anything more precious. On the right is how I generally look in the morning, trying to get some sleep, waiting for the never ending day to end... I'm still waiting, but it's worth it, and has been one of the best forever long days of my life!


At about 2 months our little family ventured on our annual Payson Lake's Family Campout with the twins in-tow. It was their first exposure to camping, and I think they loved it!






Avery loves her brothers, as you can tell, and is always thrilled at the chance to hold them.  Coincidently her new favorite book lately is Little Mommy, and she is definitely always willing to help.


The boys at their 2 month check ups and Avery at her 18 month.  This doctor's visit was pretty crazy, so I'm glad I had a few helpers.  All three kids passed with flying colors!

36 Weeks Pregnant With Twins!


Wow! I can't believe I'm finally at the 36 week mark! A part of me thinks it has flown by, and then I realize I still have at least 2 more weeks left and then time is crawling by again.
  I look back on my pregnancy with Avery and I will NEVER complain about a singleton pregnancy again, because it was a breeze compared to this.  I'm not complaining about being pregnant with twins, I'm actually so ecstatic I can hardly stand it!  My body is just in so much pain right now, and my hormones are off the charts I just need to vent a little, and tell of the joys and horrors of a twin pregnancy.

First the facts:

        Both baby A and baby B were head down at my last NST (non stress test) appointment. At this point in my pregnancy I've been having NSTs once a week.  This involves a small ultrasound to check fluid and determine the boy's positions then being hooked up to 3 different monitors, one to check baby A's heart rate and movement, the second monitor checks baby B's heart rate and movement, and the third monitor is checking for contractions.  I have to be hooked up for at least 20 minutes, however, if the babies move at all away from the monitors they have to start over until they get a steady heart rate for 20 minutes.  The nurse informed me that most women love having this time to just relax and maybe take a nap, but I hate it! It is so uncomfortable sitting in the reclining hospital chairs.

        In the beginning of my pregnancy every 2 weeks I would have an ultrasound to check the fluid levels in each of the boy's sacs.  They've always looked good, so at 24 weeks they said we could check every 4 weeks instead. Since my boys share a placenta it's a sure sign that they are identical twins, and with that comes certain risks like TTTS (twin to twin transfusion syndrome) which involves one of the boy's stealing food or even blood from the other twin, which could result in smaller birth weights or even stroke and death.  Thankfully our boys have passed so far with flying colors!

        Every 4 weeks we have a growth ultrasound where they measure every part of the babies and make sure that they are growing at similar and healthy rates.  Our most recent growth ultrasound was at 33 weeks, and both twins were weighing in at 4 lbs. and 4 lbs. 1 oz.  Next week will be our last growth ultrasound, and I'm hoping for 6 pounders!

Now the pains;

        I weigh about 158 right now, and I can feel the difference the added weight does to my body.  My feet hurt constantly, and throb due to the extra swelling.   I can't wear my wedding ring anymore because my fingers are little sausages, so now I've taken to wearing my big pink gaudy Mary Kay ring, it's fun.

       I can't sit up straight without my ribs stinging and then going numb.  I think Maverick has burrowed his way so high up there I can hardly move.  Not being able to sit up straight has also made using the restroom quite difficult, since they haven't made reclining toilets yet.  The whole issue of wiping myself when I'm finished is an entirely different problem with my belly becoming ever larger.  I'll leave it at that.

         Heartburn hasn't been too terribly bad, however, I don't go anywhere without my Tums.  If I can eat enough food regularly then it doesn't seem to be an issue at all.

        Headaches and sensitive eyes have become my new companions.  I need to drink water constantly, and when I don't drink enough I am punished with headaches.

      The worst pain of all though is not being able to pick up my precious baby Avery when she's crying out to me, or when I give in and the contractions start.  I think Avery is starting to understand that her life is about to change drastically, because she has begun to cling onto me and wants to be held a lot more than usual.  I'll be happy when I can easily pick her up and swing her around again.

The Joys:

       I LOVE that I am having twins! I have always said that I not only wanted twins, but that I would have twins, and it truly is a dream come true!

       I feel them moving constantly.  It's not like your usual punch here, and a kick there, it's like a wave pool is permanently set to the ON position, and they are having a blast riding the waves!

The Rant:

      When delivering twins in a hospital it is often common practice to have them via c-section, thankfully that is not the policy where I will be birthing my twins.  However, it is common practice to deliver twins in an operating room, even if there is no reason to suspect complications.  I have talked to every hospital in the area and every doctor, and none of them will relent on this practice, and it absolutely infuriates me!
       We are a hypno-birthing family, and for my labor and delivery to be successful I need dim lighting, and a homey environment.  The thought of being wheeled out of my dim peaceful room into the bright hallway and operating room just as my body is starting to transition and push the babies out is so appalling it makes me mad! What is wrong with me birthing my babies in an environment of my choosing?
        I keep having nightmares that things aren't going to go the way I want, because I already know they won't accommodate me on where I want to birth my boys, and I'm frustrated that there seems to be nothing I can do about it.

Anyway thanks for letting me vent, I really am enjoying my pregnancy, and am so grateful I can go to the pool almost everyday otherwise I don't think I could survive.  I feel blessed to have been chosen to carry these sweet boys, and I'm so excited to meet them in a few weeks!

The Undead Question


When I die I want my body to be put to good use. After contemplating the various ways that can happen (organ donation, displayed on the bodies exhibit, used as a med school cadaver, etc.) I have decided that it should be as a souless creature of the night. My top three choices, and the only 3 I can really think of are: A) Vampire; B) Zombie; C) Reanimated body (think frankenstein). So here are the pros and cons of each.

Choice #1) Vampire-When I think of a vampire, I am going to go with the classy tuxedo wearing vampire, not that emo rabble.

Pros:

1. You can turn into a bat- Do I really need to explain how cool this would be?
2. Awesome teeth- When I was a kid, I used to test how sharp my teeth were with my fingers, unfortunately after having my adult teeth for about 20 years, they are not nearly skin piercing sharp.
3. Chick magnetism- My wife can't get mad at me for this one because it's just my body the ladies want, my soul will be with her in heaven.
4. Tuxedo and high collared cape- This is just classy.

Cons:

1. Death by sunlight- This is not my favorite as I enjoy soaking up the rays.
2. Blood being my favorite food- I am not a blood person. I hate liver, raw steak, and donating it.
3. You have to have your blood sucked dry to become a vampire- As I mentioned before, I am not a fan of needles, much less sharpened teeth (no matter how cool they look). No on donation.

Choice #2) Zombie- These guys really get a bad rap. Everyone is saving up on ammo to kill them and no one is taking the time to get to know them.

Pros:

1. Ability to take a bullet- How many shots with a shotgun can these guys take? From the movies I've watched and video games I've played, up to 20 for sure.
2. Great community- Have you ever noticed that zombies always seem to hang out together and never seem to attack each other? It's pretty much a big family.
3. We will take over the world- You know it's coming, the Zombie Apocalypse. The whole earth will be run over by zombies, you may as well embrace that fact and join the winning side.

Cons

1. Eternal stupidity- Although Zombies are good at hiding and pouncing on the unsuspecting, they are as dumb as bricks. I enjoy intelligence.
2. Favorite Food=Human flesh- Besides not being very appealing, this is a scarce resource, and with how dumb zombies are, there is no chance for farming.
3. Filth-I'm a bit of a germaphobe and somewhat of a clean freak. I don't think I could spend forever in my own filth.

Choice #3) Reanimated Body- Frankenstein's monster style. If I could only donate 1 body part, I would have to go with my brain.

Pros

1) Normal Diet- I'm pretty sure as a reanimated body (just my brain mind you) I could eat whatever I wanted, not just human body parts.
2) Intelligence- If I donated my brain, as hideous as my body may be, I could still enjoy the finer things in life.
3) Sunlight- Although farmers with pitchforks may attack me without provocation, I could go out in the sun if I wanted.

Cons

1) Farmers with pitchforks- These guys are you nemesis. Second death by pitchfork does not sound fun.
2) My whole body wouldn't be donated to the cause- At least as a vampire or zombie my entire body could come back.
3) Thread- It would really be a pain to be held together by thread for the rest of ever. Imagine if you had a tear in your wrist thread, or the back of your neck. What a pain to fix.

Although I still haven't decided which I want to be, I strongly encourage you to join the ranks of the undead. What else are you going to do with your body?

Northern California!

This past weekend our little family got to take a trip back to California for Robert's brother Mark's wedding. We were so excited for an excuse to go back to California, and it was also Avery's first trip to Grandma and Grandpa Thompson's house.
We were so nervous about traveling with Avery because she has become such a busy body since learning how to move, so we drugged her with Baby Einstein films and thankfully we made it. She did amazing!
Drinking a little sasparilla we picked up in one of the old mining towns we stopped in.
Mark and Megan's wedding was absolutely beautiful in the Sacramento Temple. I didn't get many pictures because everyone else was, however, I did capture a couple of pictures of my two favorite people.
Avery loved getting to know her great grandparents a little more on the trip as well, and they of course loved her!
We had the chance to visit Robert's family's almond orchards. I feel like I'm in a Jane Austin movie every time we stroll through these beautiful trees.
Robert's good friend from back home has the hobby to grow GIANT pumpkins, and we were fortunate enough to visit his pumpkin patch. Tammy my wonderful sister-in-law crocheted this adorable hat for her cute baby penny.
Avery also made a new friend with Robert's friend's daughter who was great at sharing her toys.
Avery picked out her pumpkin, and we were able to take it home with us, sooooo cool!!




It was bigger than James.
Since we probably wouldn't see Robert's family again before Christmas we brought everyone's Christmas presents, which were framed prints of a beautiful painting of Mary done by my brother Kevin. I think it turned out beautifully.
On our way through California we stopped at this adorable old mining town Auburn, which I have always loved and had thoughts of living in someday.

They had several cool old pieces of mining equipment.
There was this HUGE sculpture of a miner that was awesome.
Robert helped him pan some gold.
Once at Grandma and Grandpa's Avery had fun getting to know her cousins.
A couple nights before the wedding the girls went our for a girl's night and had mani-pedis and then went out to eat. It was a blast to bond as Thompson women!


We also made time for a trip up to Yosemite National Park which I have wanted to visit since I married a California boy. We stopped at an old mining town called Couterville because a few of our members were getting car-sick along the winding roads.
We took the opportunity to explore, and it was really cool.
Avery especially enjoyed this cool old mining train.
